Even before I took the whole-foods, plant-based diet, I made this soup. Here I share my very simple very easy, and very creamy dairy-free soup recipe.
Creamy Cauliflower + Mushroom Soup
Makes approximately 4 servings.
What You’ll Need:
- Half a small cauliflower
- One plastic box of the cremini mushrooms
- 4 cups of water
- 4 scoops of the veggie broth powder
Cooking It:
- Wash and break cauliflower into smaller pieces
- Wash the mushrooms (no chopping required)
- Bring large pot of water to boil
- Put cauliflower. Wait to boil again and for 2 minutes
- Add the mushrooms
- Add the veggie broth powder
- Add 2 t of salt
- Boil for another 2 minutes or so until cauliflower is softish
- Turn off stove and put contents into blender
- Blend at medium speed for 20 seconds
- Salt and pepper to taste
