My Creamy Cauliflower & Mushroom Soup recipe

Even before I took the whole-foods, plant-based diet, I made this soup. Here I share my very simple very easy, and very creamy dairy-free soup recipe.

Creamy Cauliflower + Mushroom Soup

Makes approximately 4 servings.

What You’ll Need:

  • Half a small cauliflower
  • One plastic box of the cremini mushrooms
  • 4 cups of water
  • 4 scoops of the veggie broth powder

Cooking It:

  1. Wash and break cauliflower into smaller pieces
  2. Wash the mushrooms (no chopping required)
  3. Bring large pot of water to boil
  4. Put cauliflower.  Wait to boil again and for 2 minutes
  5. Add the mushrooms
  6. Add the veggie broth powder
  7. Add 2 t of salt
  8. Boil for another 2 minutes or so until cauliflower is softish
  9. Turn off stove and put contents into blender
  10. Blend at medium speed for 20 seconds
  11. Salt and pepper to taste
