My Creamy Cauliflower & Mushroom Soup recipe

Even before I took the whole-foods, plant-based diet, I made this soup. Here I share my very simple very easy, and very creamy dairy-free soup recipe.

Creamy Cauliflower + Mushroom Soup

Makes approximately 4 servings.

What You’ll Need:

  • Half a small cauliflower
  • One plastic box of the cremini mushrooms
  • 4 cups of water
  • 4 scoops of the veggie broth powder

Cooking It:

  1. Wash and break cauliflower into smaller pieces
  2. Wash and rinse the mushrooms (no chopping required)
  3. Bring water to boil
  4. Put cauliflower.  Wait to boil again and for 2 minutes
  5. Add the mushrooms
  6. Add 2 t of salt
  7. Boil for another 2 minutes or so until cauliflower is softish
  8. Turn off stove and put contents into blender
  9. Blend at medium speed for 20 seconds
  10. Salt and pepper to taste
